We are pleased to bring to you another exciting new whisky release - this time from Billy Walker at GlenAllachie.
The latest new innovation from the GlenAllachie Distillery - The GlenAllachie 2012 Vintage Cuvée Wine Cask Finish uses both innovation and traditional skills in its making.
The French term, ‘Cuvée’ is used in the wine sector to reference a blend that typically comprises more than one variety of grape.
The Speyside-based distillery has applied the description to their 9-year-old Cuvée to define it as a marriage of spirit from the four fine wine casks sourced from world-renowned regions in France and Italy - Bordeaux, Languedoc and Valpolicella.
After primary maturation in American oak ex-Bourbon barrels, the spirit has undergone over 20 months of additional aging in the selected wine barriques. The character development of each individual barrique was carefully monitored, before the whiskies were expertly combined by Master Blender, Billy Walker.
The Languedoc casks impart notes of “red fruits, sweet spices and garden herbs”; whilst the Recioto Della Valpolicella, produced in Verona, Italy, contributes “ripe cherries, coconut shavings, liquorice and raspberry coulis”; and the Premier Cru Classé wood brings “blackcurrant, espresso coffee and wild truffle” to the table.
The resulting golden liquid offers up elegant stone fruits, hints of toasted almonds and zesty orange peel on the palate.
Tasting Notes
COLOUR: Golden Bronze
NOSE: Bursting with orange blossom, espresso, maraschino cherries and honeysuckle, with hints of candied stone fruits, hazelnuts, lavender and cinnamon.
TASTE: Waves of dark chocolate, redcurrants and burnt coffee beans, followed by crystallised almonds, blackberries and orange zest, with ginger and liquorice on the finish.
This limited expression is bottled at 48% ABV, without chill-filtration and at natural colour to showcase the whisky in its purest form.
