Mapmaker's Coastal Spiced Rum 70cl
Rum Worth Finding!
Dunnet Bay's House Rum mastered by their distiller, Kevin, is twice distilled using their bespoke copper pot stills. They only collect the middle cut of the 2nd distillation for use in MapMaker’s Rum. This is then blended with Caribbean rum, Loch Calder water and, using Hanna’s expertise, spiced with local botanicals: lemon verbena, scurvy grass, sea kelp and Scottish sea salt.
Mapmaker’s Rum is a tribute to Timothy Pont, an excellent cartographer who spent his summers diligently surveying Scotland. In 1600/1601, Pont was appointed minister of Dunnet Parish, a post he still held in December 1610. The only monument to Pont, other than his maps, is a commemorative plaque in Dunnet Parish Church which is located next door to Dunnet Bay Distillery.

Tasting Notes
Nose: A touch of banana and vanilla followed by light citrus and toffee notes
Palate: A full-bodied burst of bright citrus followed by salted caramel with a light peppery spice
Finish: Salted caramel with well-rounded spice and a delicious lasting salinity
The Botanicals:
SCOTTISH SEA SALT - At Blackthorn, Scottish West Coast sea water is slowly trickled through a graduation thorn tower whilst being evaporated using the exhilarating West Coast winds to create delicious sea salt. This adds a hint of salinity to Mapmaker’s Rum.
SCURVY GRASS - Cochlearia officinalis is a perennial coastal plant characterised by a strong mustard/horseradish taste. Scurvy grass is used in our Mapmaker’s Coastal Spiced Rum to add hints of liquorice and a peppery heat to the spirit. Contrary to popular belief, scurvy grass isn’t much higher in Vitamin C than other botanicals but fell in to favour as it was easy to find and identify.
KELP – OARWEED - Kelp are large brown algae seaweeds that grow in underwater forests in shallow oceans. The large, brown, flat blades of kelp are rich in iodine, protein, magnesium, calcium and iron – a real superfood! However, we use kelp to provide a fabulous oceanic umami flavour to the rum.
